After several weather warnings, snow arrived in Cornwall yesterday. Historically Cornwall really doesn’t see much snow so you can imagine the chaos that ensued. Roads were gridlocked, schools were closed and it felt like the city of Truro went into shutdown. Ok, snowmageddon it might not have been and exaggerate a little I might but you get the drift. One thing is for certain, the coast in the snow is beautiful. The photos of the Minack Theatre and Sennen Cove emerging online were stunning.
Being self-employed I am lucky enough to be able to work from home so I decamped to the sofa and watched the snow fall from the warm. By the time the afternoon came around I was craving something sweet so whipped up a batch of Deliciously Ella cookies. I found this recipe online after I listened to a podcast of Ella chatting to Yoga Girl. I can’t envisage moving to a plant-based diet although a recent tummy bug and the general feeling of wanting to feel healthier is drawing me towards purely vegetable-based meals even if just once or twice a week.
These cookies were the easiest things to make, I don’t own a food processor but found them easy enough to whip up in a big bowl with a wooden spoon. After no more than 10 mins prep and 20 mins in the oven, this was the result.
I don’t imagine these will last long 🙂
